Restaurant that makes history in Lisbon celebrates 20 years with a special menu inspired by the chef’s career

On November 11, 2004, at the top of Parque Eduardo VII, a group of 11 partners founded a restaurant that, through innovation, would change the capital’s gastronomy. Disruptive, at the time, it stood out not only in the way the dishes were prepared and presented, but also in the service and training of future cooks. The man responsible for this revolution was the chef Joachim Koerper, a German with over 50 years of experience who fell in love with Lisbon. After a year of opening doors, he earned a Michelin Star, which he still maintains.
“From the first dish he prepared for his family at the age of 8, in Germany, he never doubted that he was born to cook. Passion, art and the pleasure of cooking brought him together in 2004 on the starting journey of Eleven, where he reinvented, refined and recreated Portuguese cuisine with his international background and unique mastery”, says in a statement about Joachim Koerper, helmsman of this Lisbon house. Eleven’s signature cuisine distinguished itself in the first year of opening with the award of a Michelin star, being the restaurant in the capital to have operated for the most consecutive years with a Michelin Star, all 20 of its existence.
Eleven’s 20th anniversary celebrations have already begun, but will continue throughout the year. The 20th anniversary menu was the first moment of the celebration. A dinner, on April 24th, with José Lopes, chef from Algarve Bon Bon, awarded a Michelin star, and who played for the Eleven team is the second moment of the celebrations. Also the placement of a work of art by the duo of Brazilian artists based in Lisbon, the Marques Officemarks the celebration, which will take place every month, always around the 11th.
In recent years, the path pointed out by the Eleven restaurant has followed the path of sustainability, and in this new menu, the main highlights are seafood products and fresh seasonal products, many of them coming from the organic production farm in Ericeira, with inexhaustible dose and protagonist of Koerper cuisine.

The starters feature “Tuna in two textures with lemon caviar and pickled vinaigrette”, followed by “Foie gras with eel, Azorean pineapple and pink pepper” or a version of “Crustacean cream with black truffle and its brioche”. In the main dishes, the chef travels by personal taste for squares and markets, fusion of cultures and traditions and suggests “Cod “Iceland” with bivalves and seaweed” or “Lacquered suckling pig, fried rice, mango, shrimp” inspired by the markets of Singapore. To finish, try the unmissable “Passion fruit soufflé with banana and nutmeg ice cream” with the exotic notes and spices very present in the influences of Eleven’s cuisine.

Above all, we want our customers to feel the harmony between the nostalgia of traditional flavors and the innovation of contemporary ingredients, in a natural and celebratory evolution of what distinguishes Eleven cuisine from the past to the present”, describes Joachim Koerper about the menu 20 years, which will be available throughout the year, accompanied by a supplement of national and international wines chosen by the chef.
