Dumplings are boiled dough products that are served with cracklings, mushrooms, and cream sauce. In Ukrainian gastronomy, dumplings stand next to dumplings. To make the dish truly festive, you can add filling inside.
The idea of making Poltava dumplings was published on the Instagram page of the winner of the “Master Chef” project Valeria Matrokhina (valeria.matrokhina). For this recipe you will need champignons.
Ingredients:
- chicken egg – 1 pc.
- soda – 0.5 tsp.
- salt – to taste
- flour – 550 g
- butter for lubrication
- boiled chicken fillet – 1 pc.
- onion – 1 small
- champignons – 100 g
- sour cream – 1 tbsp. (optional)
- spices and smoked pear to taste
Ingredients for the sauce:
- onion – 1 small
- pickled mushrooms – 100 g
- sour cream – 50 g
- flour – 1/2 tbsp.
- spices, salt
Method of preparation:
1. Combine kefir, soda, salt and egg.
2. Gradually add sifted flour.
3. Let the dough rest for 30-40 minutes.
4. Boil chicken fillet with spices and beat in a blender.
5. Grate the mushrooms on a coarse grater.
6. Cut the onion and fry it in vegetable oil, add mushrooms.
7. Add spices: juniper, bulrush, pepper, salt and smoked pear.
8. Combine the fillet, mushrooms and a spoonful of sour cream, if the filling is not juicy.
9. Form dumplings and steam until the dough is ready.
10. For the sauce, fry onions and mushrooms, add sour cream, spices and a little flour.
11. When serving, you can add a little grated smoked pear.
